Chia Pudding
Ingredients
For two servings:
- 1 cup coconut milk
- 1/8 cup Three Peaks Manuka honey
- 1/4 teaspoon vanilla essence
- 1/4 cup chia seeds
Method
Blend the coconut milk, Three Peaks Manuka honey and vanilla essence until smooth. Place into a bowl and stir through the chia seeds. Refrigerate for at least 4 hours, or overnight, until ready to serve.
Just before serving, top with a mixture of fresh berries, a drizzle of Three Peaks Manuka honey and half a passionfruit.
Variations: You can stir any other flavourings into the chia pudding before you refrigerate it – the only limit is your imagination! Chocolate to cherries, berries or any of your favourite spices or flavours. The list of toppings is equally limitless – look to add flavour and texture combinations.

Brew your favourite herbal tea, let steep to develop the flavours. While still hot (but not boiling) add Three Peaks Manuka honey to taste and stir so that the Manuka honey dissolves throughout the tea.
Preheat the oven to 175°Celcius. Wash and dry ripe yet firm pears, then cut them in half – two halves per person. Leave the skin and stalks intact for visual appeal. Place on baking paper in an oven-proof dish.
Combine these ingredients in a blender until thick and completely smooth. Pour into a beautiful bowl and top with your favourite toppings for extra nutrition, crunch and texture.
